Indulgence Without Guilt: Healthy Cake Icing Recipes

For many, the frosting is what makes the cake.  Making your own icing at home is easy, and it gives you control over the ingredients you are consuming.  You can control your sugar, fat, and animal product intake by making your own frosting.  There are now a number of healthy cake icing recipes that allow you to create something healthy without disappointing your frosting-loving guests.  Using these creative ideas, you can make an icing for your holiday or birthday cake that is sure to satisfy.  Take a cake iced with one of these recipes to your next potluck, and you will have no leftovers to take home.


Greek Yogurt Icing

Greek yogurt is high in protein and low in carbs.  Its rich, creamy texture lends a tangy bite to the icing you use on that cake you are making for your party or potluck.  Its distinctive taste will please your guests; they will never know they are eating something healthy.

One cup of Greek yogurt
One teaspoon of vanilla extract
One-half cup of powdered sugar

Sift powdered sugar into a mixing bowl.  Add yogurt and vanilla extract.  Blend until your mixture becomes smooth and thick.  Refrigerate for at least a half hour to allow it to thicken further.  This recipe will frost twenty-four cupcakes.

Vegan Chocolate Frosting

Living a vegan lifestyle does not mean you cannot enjoy the good things in life, like a rich, creamy frosting.  This delicious frosting recipe gives you all the indulgent enjoyment of a traditional frosting with no animal products.  This is also a low fat, low calorie recipe, making it doubly healthy.  You will lose nothing in taste and enjoyment by using this special vegan recipe.

Eight ounces of low fat tofu, silken
Three tablespoons of powdered sugar
One-fourth cup of powdered cocoa
One-half teaspoon of salt
One teaspoon of reduced saturated fat vegetable margarine

Use a hand mixer or a food processor to combine all of these ingredients until your frosting is creamy and smooth.  Store in the refrigerator until use, and store any cake frosted with this recipe in the refrigerator until you ready to enjoy it.  This recipe makes enough frosting for one nine- or ten-inch layer cake.

Sugar Free Frosting

This is a great recipe for diabetic individuals or those who are trying to reduce their sugar intake for weight loss purposes.  It tastes great, and the pudding mix gives it a rich texture.  Experiment with different flavors of pudding to change up the taste of your frosting.

One package of sugar free pudding mix, 1.4 ounces
One and three-fourths cups of milk
One package of cream cheese, 8 ounces
One container of frozen whipped topping, lite, 8 ounces

Mix together milk and pudding mix in a medium bowl.  Combine thoroughly and allow to stand until thick.  In a large mixing bowl, use your hand mixer to beat the cream cheese until creamy and smooth.  Add pudding mixture and beat until completely mixed together.  Fold into the mixture the lite whipped topping.  Store in the refrigerator until ready to use.
