Applesauce Cake

Promising the taste and smells of fall, this is a great cake to serve at a Halloween party or to bake for a fall bake sale or potluck.

Two cups of flour
One teaspoon of salt
One-half cup of vegetable or canola oil
One-half teaspoon of nutmeg
Two cups of raisins
One cup of sugar
Two teaspoon of baking soda
One tablespoon of cinnamon
One-fourth teaspoon of ground cloves
Two cups of applesauce

In a large bowl, combine the ingredients, using a spoon, until well mixed and smooth.  Prepare a tube pan with shortening and a dusting flour.  Bake for forty-five to fifty minutes in a 350-degree oven.

Low Calorie Traditional Chocolate Cake

This recipe uses a store bought cake mix, but offers an alternative way of preparing it.  You'll keep the taste and lose the calories.  Treat your child to a homemade cupcake or two, or use this recipe to make your next birthday cake.

One cake mix, chocolate
Dash of salt or cream of tartar
Four egg whites
One and one-half cups of water

Your cake mix box will tell you to use eggs; follow these instructions instead.  Place egg whites in a bowl and dust them with cream of tartar or salt.  Whip egg whites until you have soft, white peaks.  In a  separate bowl, combine mix and water; using a hand mixer, beat for about three to four minutes.  Gently fold in egg whites to create a light, fluffy batter. 

Pour batter into two ten-inch cake pans, or into cupcake cups, and bake at 350 degrees for twenty-five to thirty minutes.  The time may vary depending on your oven and your pans.

Low Calorie Dark Chocolate Cake

The rich taste of this cake will make it ideal for your next Christmas party or family celebration.  This is an easy cake to make from scratch, and your results will be delicious.

One and one-half cups of flour
One cup of sugar
Three-fourths cup of powdered cocoa
One and one-half teaspoon each, baking soda and baking powder
One teaspoon of salt
Two large eggs
Two teaspoons of vanilla
One-third cup of oil, vegetable or canola
One cup of milk
One cup of water, boiling

Combine dry ingredients in a large mixing bowl; next add milk, oil, eggs, and vanilla.  Stir until thoroughly mixed.  Last, add the boiling water; batter will be runny.

Pour batter into two prepared nine- or ten-inch cake pans, and bake for thirty-five to forty minutes in a 350-degree oven.  Use a low calorie icing between the layers and top with a low calorie whipped topping.
